I whipped this granola up for kiddo #2 who requested a granola with no cranberries but loves peanut butter.
7 cups rolled oats, gluten free
1 cup shredded coconut, unsweetened
1/2 cup honey
1/4 cup oil
1/2 cup peanut butter
1/2 cup ground flax seed
Preheat oven to 300. Mix oats and coconut in a large mixing bowl. In a separate bowl mix honey, oil and peanut butter. Pour over oat mixture and mix well. Spread on jelly roll pans about 1/2" deep. Bake for 30-45 min or until starting to brown. Stir occasionally.
Set out to cool. Mix in flax seed. Enjoy!
Hi Melanie, do you think fresh grated coconut would work the same? It would be more moist than pre-shredded kind you buy at the store. But I have this fresh coconut that we just cracked into and I need to use it up!

Replying a week later, sorry! I think it would work. I'd try toasting it first to dry it up a bit.
