I love this stuff! I was so excited to find I could tolerate gluten free oats just fine and had to try making some safe granola. As with all grains, soaking it makes it easier to digest.
6 cups gluten free rolled oats (quick oats will work fine too)
1 cup shredded coconut, unsweetened (you can leave this out, just add another cup of oats)
1 cup sliced almonds
1 tsp vanilla
1/2 cup honey
1/4 cup oil (melted coconut oil tastes yummy in this recipe)
3/4 cup dried cranberries
1/2 cup ground flax seed
Preheat oven to 300F. Mix oats and coconut in a large mixing bowl. In a separate bowl, mix vanilla, honey and oil. Pour over oat mixture and stir to coat. Spread out in a jelly roll pan about 1/2" deep. Use 2 or more pans if needed. Bake for 30-45 min, until starting to brown. Stir occasionally.
Set out to cool. Mix in cranberries and flax seed. Enjoy!
